Waldorf salad chicory bites
Pair these Waldorf salad chicory bites with a glass of fizz for a garden party. Quick nibbles like these will go down well and are super-simple to prep
Ingredient
- 2 heads of chicory (we used red)
- 1 green apple, cored and finely chopped
- 1 celery stick, finely chopped
- small handful of walnuts, roughly chopped
- 6 red grapes, finely chopped
- 2 tbsp natural yogurt
- ½ lemon, juiced
- 1 tsp Dijon mustard
- 50g crumbly blue cheese or vegetarian alternative

Trim the root off each head of chicory and pull apart the individual leaves (you should get 16-20 leaves). Lay the leaves out on a large serving platter (see tip below).

Combine the apple pieces, celery, walnuts, grapes, yogurt, lemon juice and mustard in a bowl, and season well. Spoon a little of the filling into each of the chicory leaves towards the root end, leaving the leafy end to act as a handle. Crumble over the blue cheese and serve.
